PURE 2018
2018 was the earliest harvest of the past decade as we started 10 days earlier that the usual picking date. The be lessened annual rainfall, approximately 155mm and the absence of rain in spring led to early maturation in the grapes and along with the minimized rainfall of the past years there was a 45% production reduction. But for the low quantities and the small berries we observed high concentration that offers wines of high acidity and intense mineral character
MorePure is essentially a red wine, masterfully disguised as a white. Serving Pure too cold will not allow the wine to show its full aromatic layering; a temperature of 14-15 oC is suggested.
Large glasses, like Sophienwald Grand Cru Bordeaux or Zalto Universal, will help unveiling its true potential.
Same stands true for decanting, should you wish to enjoy a bottle of Pure that is six years old or younger. Decant in a slow manner, allow settling for sixty minutes. Older vintages do not require decanting but will benefit with time in the glass.

PURE 2017
2017 was a relatively rainy year for Santorini with 249 mm of water which along with a mild winter led to healthy vines. The spring was nice as well with no extreme winds or heat and March was particularly rainy. Although by the end of June till the beginning of July we experienced a sudden heat wave that burned a part of the crop and dehydrated the grapes. As a result the production was reduced but the quality have been kept very high getting wines of high alcohol, high acidity and long aging potential.
